Nancy's Chocolate Cake Recipe

Here's Nancy's recipe that she sent me in an email years ago. Time for a chocolate tribute to Miss LaFlamme!



Amazing Chocolate Fudge Cake

1 cup Hershey’s cocoa powder
1-1/2 cup Boiling water
3 Large eggs
1-1/2 tsp Vanilla
3 cups Sifted cake flour
2 cups Brown sugar
2-1/4 tsp Baking powder
3/4 tsp Baking soda
1 cup Unsalted butter (softened)

In a medium bowl whisk together the cocoa and boiling water until
smooth. Cool to room temperature.

In another bowl, lightly combine the eggs, 1/4 of the cooled cocoa
mixture, and vanilla.

In a large mixing bowl combine the remaining dry ingredients and mix on
low speed for 30 seconds. Add the butter and remaining cocoa mixture.
Mix on low speed until the dry ingredients are moistened. Increase to
medium speed (high if using a hand mixer) and beat for two minutes to
aerate and develop the cake’s structure. Scrape down the sides.
Gradually add the egg mixture in 3 batches, beating for 20 seconds
after each addition to incorporate the ingredients and to strengthen
the structure. Scrape down the sides.

Bake in two 9” cake pans that are greased, floured, and lined with
parchment or wax paper at 350 for 20-30 minutes or until a toothpick
comes out clean. Do not overcook.

Buttercream Frosting

6 tablespoons butter, softened
2 2/3 cups powdered sugar
1/2 cup cocoa
1/3 cup milk
1 1/2 teaspoons vanilla

1. Place butter in a bowl and beat until creamy.
2. Add sugar and cocoa, mixing well.
3. Stir in milk in portions, stirring each time.
4. Add vanilla.
5. Spread on cooled cake or other items needing frosting.
